150g --- Unsalted Butter
150g --- Caster Sugar
150g --- Plain Flour
1 Tsp --- Baking Powder
⅛ Tsp --- Salt
3 --- Medium or Large Eggs
1 Tbsp --- Pandan Extract
3 Tbsp --- Coconut Milk

Step 1: Using an electric mixer, Beat Butter (diced and at room temperature) and Sugar until softened

Step 2: Add Eggs one at a time (Room Temperature)

Step 3: Sift in Flour, Baking Powder, Coconut Milk, and FOLD gently using a spatula

Step 4: Add in Pandan Extract, Salt to the batter until incorporated. Then, transfer the batter into the loaf tin

Step 5: Bake at 170C or 340F for 40 - 45 mins
